I can still hear Mama’s screen door slammin’ as she brought in a basket of fresh-picked beans. We’d sit at that little Formica table, snappin’ beans and chattin’ about everything under the sun.
Now, don’t get me wrong — I love a good ol’ classic casserole with all the fixin’s, but sometimes you want somethin’ lighter without losin’ that down-home flavor.
This Clean Green Bean Casserole keeps the cozy, creamy comfort you love — minus the processed stuff. Fresh mushrooms, Greek yogurt, and a crunchy almond topping make it clean, filling, and feel-good.
This week’s win: Clean Green Bean Casserole, A Healthy Twist on a Southern Classic

✨ Ingredients:
Green Beans:
1½ lbs fresh green beans, trimmed
Salt, for boiling
Sauce:
1 tbsp olive or avocado oil
1 small onion, chopped
2 cloves garlic, minced
8 oz mushrooms, sliced
2 tbsp arrowroot powder (or flour)
1½ cups unsweetened almond milk
1 tsp tamari (or soy sauce)
Salt + pepper to taste
Topping:
½ cup almond flour
½ small onion, thinly sliced
1 tbsp olive oil
🌀 Instructions:
Boil Green Beans:
Cook in salted boiling water for 5 minutes. Drain and set aside.Make Sauce:
Sauté onion and garlic in oil (3–4 min). Add mushrooms, cook until soft (5 min).
Stir in arrowroot, then slowly add milk. Add tamari, salt + pepper. Simmer until thick (5 min).Make Topping:
Mix almond flour, sliced onion, and oil. Bake on a tray at 375°F for 10–12 min until crispy.Assemble & Bake:
In a baking dish, mix green beans and sauce. Top with crispy topping.
Bake at 375°F for 15–20 min.
