Ingredients

  • 4–5 medium carrots, peeled + sliced

  • 3–4 parsnips, peeled + sliced

  • 2 medium beets (red or golden), peeled + diced

  • 2–3 Tbsp olive oil

  • 1½–2 Tbsp pure maple syrup

  • 1 tsp sea salt

  • ½ tsp black pepper

  • 1–2 tsp fresh rosemary, chopped

  • 1–2 tsp fresh thyme (dried works too — progress > perfection)

Instructions

1️⃣ Preheat
400°F (205°C). Hot enough for caramelized edges — not hot enough to burn your hopes and dreams.

2️⃣ Prep the Veggies
Chop everything roughly the same size. Not ruler-level accuracy — just “kinda close.”

3️⃣ Toss
Add veggies, olive oil, maple, herbs, salt, pepper. Mix until shiny and slightly smug.

4️⃣ Spread Out
Onto a parchment-lined sheet. Give them space. Crowded veggies steam… and we want roasted, not sad sauna vegetables.

5️⃣ Roast
28–35 minutes, flipping halfway. Look for golden, caramelized edges and soft centers.

6️⃣ Finish
Taste and add a pinch more sea salt or a whisper of maple. (It’s Christmas — we are allowed to whisper.)
